uses tuna but i think you could add salmon the bezar is a spice mix that i have also added to site and umm binat has a spice mix also and loomi are dried black limes that they use alot you could probably just use lime juice , if you are in the hinderlands like i am lol. for name game oman

  1. soak rice in water 2 hours, umm binat said this could only be 1/2 hour.
  2. sprinkle tuna with bezar and salt.
  3. fry in oil.
  4. brown on both sides.
  5. remove.
  6. add onions.
  7. brown.
  8. add garlic and spices.
  9. brown.
  10. add tomato paste you could add more tomato paste here if you would like a redder rice and tomatoes.
  11. brown.
  12. add 4 1/2 c water.
  13. add loomi , or if adding lime juice do that when you take off heat.
  14. add fish.
  15. simmer covered 20 minutes.
  16. drain rice.
  17. add to pot.
  18. dont stir. the rice
  19. cover with damp cloth and put lid back on .
  20. simmer 10 minutes shake.
  21. simmer 10 more minutes.
  22. let set covered.

Taste 5 stars yet the instructions have something to be desired. I used frozen salmon fillets like the introduction suggested. No where did it say to add the tomatoes so I forgot them, I didn't use the turmeric which would have made it yellower, cinnamon or clove, but I did add more tomato paste per red rice preference. I used my own bahrat spice mix like Baharat Aka Middle East Mixed Spices - the Real Mix, less extra virgin light tasting olive oil, Basmati rice which just needed 30 minutes soaking, plus the optional black loomi.
