This recipe is from my Mother in Law. My brother in law told my kids not to eat grandma's salad because it was made with fish eyes!! It took them a while to convince them that there were no fish eyes in the salad and now they love this treat. They even request it by asking for the Fish Eye Salad--hence the name! Prep time does not include the overnight soaking of the tapioca
- 236.59 ml pearl tapioca
- 473.18 ml water
- 473.18 ml milk
- 4.92 ml salt
- 177.44 ml sugar
- 566.99 g can fruit cocktail, , drained
- 177.44 ml whipped cream (my mother in law uses Nutriwhip non dairy whipped topping)
- Soak tapioca and water over night,drain Add milk and salt and cook until transparent.
- Add sugar, and cool.
- Add fruit cocktail.
- Fold in whipped cream.
Do I boil the milk first before adding in the drained tapioca?

This is a great variation on plain tapioca! I like the fact that it doesn't use egggs. Ever since DH had salmonilla, I'm concerned about undercooked/raw eggs even egg whites.
