Fish Eye Salad (tapioca Fruit Salad)

"This recipe is from my Mother in Law. My brother in law told my kids not to eat grandma's salad because it was made with fish eyes!! It took them a while to convince them that there were no fish eyes in the salad and now they love this treat. They even request it by asking for the Fish Eye Salad--hence the name! Prep time does not include the overnight soaking of the tapioca"

  • 1 cup pearl tapioca
  • 2 cups water
  • 2 cups milk
  • 1 teaspoon salt
  • 34 cup sugar
  • 1 (20 ounce) can fruit cocktail, , drained
  • 34 cup whipped cream (my mother in law uses Nutriwhip non dairy whipped topping)

directions

  • Soak tapioca and water over night,drain Add milk and salt and cook until transparent.
  • Add sugar, and cool.
  • Add fruit cocktail.
  • Fold in whipped cream.
  • Chill.

  3. This is a great variation on plain tapioca! I like the fact that it doesn't use egggs. Ever since DH had salmonilla, I'm concerned about undercooked/raw eggs even egg whites.
