This recipe is so simple and quick to make, especially if the coating is made ahead and stored in the freezer.
- 1 1⁄2 cups cornmeal
- 1⁄4 cup flour
- 1 tablespoon lemon pepper seasoning
- 2 teaspoons salt
- 1 teaspoon onion powder
- 1⁄2 teaspoon paprika
- fish (fillets work best)
- Combine first 6 ingredients. This may be stored in an airtight container in the freezer. Mix before using to redistribute the seasonings.
- To make fried fish; dip fish in buttermilk, then roll in coating mix. Heat approximately 3" oil in a large skillet to 375°F Fry one piece at a time until golden brown, 4-6 minutes.
I subbed creole spice for the lemon pepper b/c we like spicy catfish and it was great. This was so much cheaper than the tiny little packets you get at the store and simple to make. Stores really well in the freezer for a quick prep later.
Made a batch of this for christmas gifts this past christmas and saved me a jar. I used it today and was very pleased. :) I also used egg in the buttermilk mixture and added panko bread crumbs in another bowl and dipped my fish in this seasoning mix than in buttermilk, egg mixture than in panko breading and placed in a greased baking dish and baked 30 minutes at 350' It was delicious!
