This coating is good for any fish you may want to deep fry. Makes nice golden brown fish.
- 3 cups canola oil
- 1 cup self rising flour
- 1⁄3 cup dry mustard
- 1 cup water
- 1 egg
- 2 teaspoons Splenda sugar substitute
- 2 teaspoons salt
- Sift together mustard and flour.
- Heat oil to 400°.
- With a mixer blend the flour mixture with the water, egg, Splenda and salt.
- Dip fish into the batter, coating well.
- Fry fish until dark golden brown.
