Firecracker Chicken Stir Fry

I've had this recipe for ages, and can't remember where I originally got it. It's a good hot stir fry! Serve with steamed rice.

  1. Heat large skillet or wok until very hot.
  2. Add oil.
  3. When oil is hot add chicken and stir fry until done, just a few minutes.
  4. Remove chicken.
  5. Add remaining ingredients except for peanuts and stir fry until tender crisp.
  6. Add chicken back into pan.
  7. Toss thru to reheat.
  8. Stir in peanuts.

My very picky husband helped me rate this, and we are Asian-loving cooks, so here goes! This has great bones! The only change we made, if you can call it that, is for the oil: we used some sesame oil and a little bit of hot chili oil. This is fabulous! Thanks, Charmie!

Hmmm...interesting and good. My dad grows red chili peppers, so we used those, and we didn't have a bell pepper, so we just left that out. Since my sister and brother don't eat spicy, they didn't eat it, but everybody else
