Love it - simple & delicious. I cut back the vinegar & water each by 1 tbsp...smaller cucumbers, I didn't want them completely swimming. These kept very well, I made them a day ahead of a party and enjoyed them for the rest of the week. Thanks LM!
This is a deliciously refreshing dish! The marinade produced very crisp and subtly-flavored dill cucumbers. I ended up marinating the cucumbers for a couple days just because I got so busy, but I think it's what led these to be soo crisp - which I just loved! In the future I will continue to marinade these for at least a day. This complimented my tuna sandwich perfectly! Thanks for sharing! I have placed this recipe into my weekly cucumber rotation. I will definitely be making this again!
These were quite nice. The dill flavor was very subtle and the mix of sour and sweet works well. Thanks for the light side dish.
Wow - these are some cucumbers!! I used an English cucumber (seedless) and scored it like you said for the extra pizzazz! The dressing is light and tangy but not overwhelming! Great with our grilled burgers tonight! I love this dish!! Still good the 2nd day too! Made during ZWT6.
