Directions

  1. Boil rice in salted water until almost tender.
  2. Drain.
  3. Boil carrots.
  4. Let cool and grate.
  5. Butter a 2 qt casserole.
  6. Combine all ingredients and pour mixture into casserole.
  7. Dot with butter and sprinkle bread crumbs on top.
  8. Bake at 375 for 30-35 minutes.

I made this following the recipe exactly. I thought it was too much work for a dish that ended up tasting just like boiled carrots. 2 out of 4 people I served it to didn't finish their servings.
