  • Boil rice in salted water until almost tender.
  • Drain.
  • Boil carrots.
  • Let cool and grate.
  • Butter a 2 qt casserole.
  • Combine all ingredients and pour mixture into casserole.
  • Dot with butter and sprinkle bread crumbs on top.
  • Bake at 375 for 30-35 minutes.

  1. I made this following the recipe exactly. I thought it was too much work for a dish that ended up tasting just like boiled carrots. 2 out of 4 people I served it to didn't finish their servings.
