Filet Mignon With Chipotle Adobo Sauce

  1. Place all but the steak in a blender. Puree until smooth.
  2. Season steaks with salt and pepper. Place in a ziplock bag and pour the sauce over meat.
  3. Chill for 2 hours.
  4. Remove meat and simmer sauce till warm.
  5. Grill steaks to desired doneness.
  6. Remove meat when done and let sit 10 minutes.
  7. Add the dripping of the meat to the sauce.
  8. Slice meat and serve over rice.
  9. Dollop the sauce over meat.

I searched for a way to use my left over chipotle chilies and WOW!! This was awesome. I read all the reviews.. and it DID NOT taste at all like ketchup.. The hot and sweet was great! Thank you for a marvelous recipe. Made our filets "extra" special!

Although filet is to die for tender, it can be a bit bland without some seasoning or sauce. This was a great choice! Easy, restaurant quality meal we will make again.
