Summery Salsa perfect for topping grilled meats. Also good on scrambled eggs or omlets.
- Saute zucchini and onions in oil for 5 minutes.
- Stir in corn and salsa.
- Cook for 2 minutes or until all veggies are tender.
- Serve with chicken or pork.
I loved this salsa. I halved the recipe and served it over chili rellenos. Then I ate the rest of the salsa right out of the bowl. I used zucchini salsa for the salsa. Thanks for a yummy salsa!
This is more than just a salsa! I served this as a side sish with a Mexican meal, and it worked out very well.
