Fiesta Taco Casserole

"This is from my beloved Betty Crocker cookbook, and it is such a favorite that I want to share it with everybody! It's also a GREAT use for those tortilla chip bits at the bottom of the bag! I've "healthed it up" a bit, but you would never guess from the flavor and the servings are huge! The cookbook says this is 345 cals per serving, 13 g fat."

  • Pre-heat oven to 350.
  • Cook turkey over medium heat 8-10 minutes, until no longer pink. Drain if necessary. Stir in beans and salsa and heat to boiling.
  • Place tortilla chips in the bottom of an ungreased 8x8 casserole. Top with turkey/bean mixture. Spread with sour cream, then top with onions, tomatoes, and cheese.
  • Bake uncovered 25 minutes or until hot and bubbly.
  • Enjoy!

  1. Loved this, my DH did as well. I had to leave out tomatoes, didn't have them on hand. I just used what salsa I had left in the refrig to make up the difference. And I, too, added corn. It was too warm in the kitchen today to light the oven. Trust me it still tastes great on top of the stove. Thanks for a Tex-tasty recipe.
     
  2. This was a really good quick dinner. I added corn like another reviewer, and DH threw in some taco seasoning to the meat while cooking it. I also used baked tortilla chips and doubled the tomato. I had to use a larger pan, as it would not all fit in my 8x8. I like how the sour cream kind of melts into it when it cooks and makes it creamy.
     
  3. Simply delicious! I did not have a fresh tomato so used a can of diced drained tomatoes and plain non fat yogurt. Otherwise made as posted with mild salsa. My old standby is Betty Crocker! Made for the Went to Market Game. Thank you smellyvegetarian for posting.
     
  4. This gets 5 stars even though I made some changes because my dh said how much he liked it, and then when he had leftovers the next day told me he would really like to have it again soon. I left out green onions and added 1 can diced green chilis, 1 can sliced black olives and 1 can corn to the beef/bean/salsa mixture. I also used full fat sour cream and probably more than 1/2 cup. topped with lots of cheese- monterey jack/cheddar mix.

I turned this into a real vegetarian (almost vegan, but not quite) recipe by using vegetarian crumbles for the turkey and substitute cheddar cheese (the kind that melts) for the reduced-fat cheddar. I used a low-fat sour cream because that's what I had leftover in the fridge. I found a can of chili beans (kidney, pinto and black) in the health food store. For my BF's sake I used a mild salsa and I sprinkled mine liberally with hot sauce:D Oh, yeah, I played around a bit with the amounts (12 ounces crumbles and 1 cup tortilla chips). A great "comfort" meal. The green onions and tomato added freshness, and the tortilla chips and sour cream were key to the taste. Great recipe, I think you'll like it however you decide to make it!

  1. I was surprised how good this was, half expecting another "blah casserole" but it wasn't! I didn't have all the ingredients, I used a homemade taco sauce instead of the salsa, no tomato on top, half Mexican blend cheese, half queso fresco and a cup of frozen corn instead of the beans. A winner, perfect for left over ground turkey. Thanks!
     
  2. We all loved this. I did change it up a bit. I used ground beef instead of turkey as that is what I had. I didn't add the sour cream, onions or tomato to the mixture but had them on the side. (otherwise my kids wouldn't have eaten it) I served with tortilla chips on the side also and we all enjoyed this. I only cooked mine for about ten minutes- I pulled it out when the cheese was melted.

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!! To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck.
