Fiery Horseradish Sauce

"This recipe goes well with the Herb-Crusted Prime Rib I posted. If you make this the night before you need it, you will find it'll taste even better than when freshly made."

• Yields: 1 cup

ingredients

• 1 green onion
• 236.59 ml light mayonnaise or 236.59 ml regular mayonnaise
• 29.58-44.37 ml bottled prepared horseradish
• 29.58 ml finely chopped parsley
• 2.46 ml Dijon mustard (optional)

directions

1. Thinly slice onion and place in a small bowl.
2. Stir in mayonnaise, 2 tbsp horseradish, parsley& Dijon if using.
3. Mix well.
4. Taste and stir in remaining horseradish, 1 tsp at a time, if you like.
5. This sauce can be made up to 3 days before serving.
