Fettuccine With No-Cook Walnut Alfredo Sauce

This is a great, quick pasta dish that you can make in the time it takes to cook the pasta. If you like, you can use 1/2 cup non-fat yogurt and eliminate the half and half to cut the fat.

  1. Cook fettuccine al dente.
  2. Toast walnuts.
  3. Mince basil and garlic in a food processor or blender.
  4. Add walnuts, parmesan, salt and pepper; pulse to mix.
  5. Add oil slowly.
  6. Add half and half and yogurt.
  7. Pour sauce over pasta.
  8. If you like, add chicken, shrimp, or mushrooms to the pasta.

So easy and so tasty! I really like the fact that you can make the Walnut Alfredo Sauce in the time it takes to cook the fettucine. I had some left-over chicken so I tossed it in. I served this with grilled vegetables. Thanks for a great dish.
