Congo Chicken and Okra

This was a nice change of pace. I used a bag of frozen baby okra, kept whole. There was quite a bit of liquid after the chicken and okra had cooked, so I removed them and boiled the tomato-ey/spicy broth down a bit to thicken and serve over rice. Thanks.

  1. Place chicken and onion in a heavy saucepan or Dutch oven.
  2. Sprinkle with salt.
  3. Using the fine blade of a grinder, chop tomato, chili peppers and ginger.
  4. Add mixture to chicken.
  5. Pour in water and bring to boil. Reduce heat and simmer, covered, for about 20 minutes or until chicken is barely tender.
  6. Add okra.
  7. Stir in tomato paste. Contine simmering, uncovered, until chicken and okra are tender.
  8. Place each breast on a individual dinner plate. Divide vegetable and liquid evenly and pour over chicken breast.
  9. Serve over 1/2 cup rice if desired.
