  1. I originally found a recipe like this at eatbetteramerica . com. It quickly became a family favorite. I never thought of using balsamic, I only used red wine and lemon (a kind of souvlaki type mixture). But overall this is possibly one of my all time favorite recipes. Don't skip broiling the feta. If you like feta you will LOVE broiled feta. Just leave it in till it browns a bit!

  2. I'm watching my carbs (south beach) and this worked out well for an easy dinner to quickly throw together, for just me. Next time, I will make-ahead and marinate the chicken in the dressing/spices beforehand, bake it and then broil it with the toppings...to boost the flavor and cut down on the dryness. I will make this again, thanks for posting! :)

  3. DH was jumping for joy when he tried this! The feta is a great touch. I left the tomatoes off but it didn't matter. I had to bake instead of broil at the end because it was starting to dry out a little. 5 stars all the way!

I was born in California and although I have been on the East Coast for most of my life I am still displaced! I love the beach and hate the cold! In our free time we love to go to the beach or the mountains and hike or intertube down the lazy Shenendoah River. It is so beautiful there! I have loved to cook all of my life and will read cookbooks like they are novels!
