Feta Cheese Pie

ingredients
- 1 (9 inch) unbaked pie shells
- 3⁄4 lb feta cheese, crumbled
- 1 cup light cream
- 3 eggs
- 1⁄2 teaspoon dried thyme
- 1 teaspoon cornstarch
- 1 dash pepper
- 1 garlic clove, minced
- 9 large pitted black olives
- 7 large green olives
- 1 roasted red pepper, cut into strips
directions
- Preheat oven to 425.
- Prick pie crust well with a fork.
- Place in freezer for 10 minutes.
- Bake 10 minutes; cool.
- Blend cheese with cream and eggs until smooth.
- Add thyme, corn starch, and pepper.
- Stir in garlic.
- Pour into pie shell.
- Bake 10 minutes.
- Arrange olives over top.
- Bake 25 minutes or until filling is set.
- When filling is set top with red peppers.
- serve warm.

Not something I'd make often but oh, what a treat! I used chopped black olives on the pie but served the green olives separately. For the light cream I chose Half 'n Half which worked out well. Alongside a Greek pasta salad for a light lunch this was very satisfying. Made for New Kids on the Block, a tag game.

I'm a working mom of 2 my son is 14 and my daughter is 11. O.K. 3 kids if you count my hubby. My son is on the picky side but loves food with a kick. My daughter will eat anything(yes even sauerkraut) the only thing hubby won't eat is raw cabbage he's getting better thanks to this site (he even ask me to make slaw). I love to cook and try new things. One of our favorite stations is food network.I've been playing around with pics and updated my pic & my icon. O.k. Tim because well just because i love to cook with the Cd player or radio blasting and i love his stuff. The Dancing Bears because my DH and i are (were) huge dead heads.
