Feta Baked With Tomato & Oregano

Cooked feta keeps its shape but becomes lovely and spreadable. Serve with warm crusty bread to scoop up the sauce.

Ingredients:

Servings: 4

• 3 tablespoons olive oil
• 2 garlic cloves , sliced
• ½ teaspoon chili flakes
• 2 (14 ounce) cans egg tomatoes , drained
• 2 tablespoons oregano , leaves chopped
• 14 ounces feta cheese , broken up into large chunks
• fresh ground black pepper
• salt , if desired, the feta may make this dish salty enough so be careful

Directions:

1. Heat 3 tbsp oil in a pan, add the garlic and cook for a minute.
2. Add the chili and tomatoes and simmer for 25 minutes until thickened. Season and stir in the oregano.
3. Heat the oven to 400°F
4. Put the feta in an ovenproof dish, cover with sauce and bake for 20 minutes before serving.
5. Serve as a hot spread with crusty bread.
