Can hardly believe that I made a salad with melon AND fe6a, but . . . I did ~ Very, very tasty salad, it was, too! This is our favourite way to eat watermelon (shhhhh...but we eat canteloupe this way, too ;-) ). Thanks for posting.
Nice salad. I will make this again, but next time I will place the watermelon on the bottom, sprinkle with the parsley, sprinkle with VERY finely crumbled feta and then drizzle with a little olive oil and top off with crushed black pepper.
The saltiness, creaminess and tang of the feta complements the sweet juicy watermelon very nicely. I did need a bit more olive oil to coat the cheese and spices. A must try! That I would use as a side to a main meal not a dessert. Thanks for this unique salad.
