Official Contest Entry: Simply Potatoes 5Fix. This is a recipe that I threw together one winter night. We wanted some kind of comfort food to go with our chicken. This is delicious.
- Slice the fennel bulb and add olive oil and 1/2 the salt. Roast at 400° for about 20 minutes. Remove from oven and set aside to cool.
- While the fennel is roasting prepare potatoes according to package. Add remaining salt and the butter. Chop the cooled fennel and add to potatoes. Fold all ingredients together lightly. You don't want to overwork them. Pour into prepared 9 x 9 casserole dish. Bake at 350° about 15 minutes or until warmed through.
