Directions

  1. Place grated vegetables in non aluminium bowl.
  2. Sprinkle on salt.
  3. Mix well, cover and let stand for 12 hours.
  4. Rinse well by running cold water over vegetable mixture in colander.
  5. Drain thoroughly.
  6. Place vinegar, sugar, and spices in heavy saucepan over medium heat.
  7. Bring to a boil.
  8. Lower heat and cook for about 15 minutes, or until mixture begins to thicken.
  9. Immediately add vegetable mixture and cook for 30 minutes.
  10. Remove from heat.
  11. Pour into hot sterilized jars.
  12. Vacuum seal.

Wow, this is a very good Zucchini relish recipe. I use to make one that ws given to me by a friend,But,I lost the recipe. We think that this is even BETTER. Will be making more of it.

I made 2 different recipies of relish this year.I enjoyed the other one much better it was 95438. I found this one too sweet.

Have had this recipe for a couple years now and it is the best by far. Only difference is my version of Fayes has 1 green pepper also. Guess its up to you if you want to add it.
