Wow! This was sooo delicious! While I don't think you could "fool" too many people and call these potatoes, this was still an extremely tasty side dish and a fantastic alternative to potatoes. I tried a recipe similar to this when I was on the South Beach Diet and it was severely lacking in flavor, but this one was the exact opposite. It had great texture as well - nice and thick. I used 1/3 less fat cream cheese and also mixed in some light sour cream. Before serving, I topped it with a dollop of Smart Balance spread. Yummy Yummy! Thanks for sharing this outstanding recipe.

I have made a lot of Faux-Tatoes in my low carb career (low carbing off and on since 1988) but this recipe is the best I’ve ever had. My Dad really thought they were potatoes but said of course he KNEW better. I served these with Lorac’s Italian Beef Patties with Balsamic Cream (Italian Beef Patties with Balsamic Cream Sauce) with the gravy from Balsamic Cream as gravy. We all thought we were in a really nice restaurant! I am sure I will never use another Faux-Tato recipe again! Thanks for sharing this Big Mike!!!

This was simply delicious. I used a broccoli cauliflower mix, and it was still scrumptuous. This is a fantastic substitute to potatoes and super tasty too. Will try with just cauliflower next time, as DH doesn't like cauliflower, but liked this! Thank you Big Mike2 for posting!

I'm not "low-carbing"; I just love cauliflower (and potatoes), so I thought I'd try this. It is truly wonderful. The cauliflower get nice and fluffy like whipped potatoes. You do have to use a blender of some sort....at first I tried the potato masher and it just looked like mashed cauliflower, so then I used the immersion blender. Whether you're watching crabs or not, this is great! I'll make thsi again; thanx!

We LOVE these... we usually sprinkle a little cheddar cheese on top. People never believe it when we tell them what it is. A big hit and just yuuuuummmmy!

This is so delicious, and you're right, no one can tell the difference and are surprised when you tell them. I'm not a huge cauliflower fan, but this is one way I absolutely love it!
