Delicious filling salad, full of flavour. Works very nicely for lunch. Took the recipe from my husband as he used to work in an Arabic restaurant as an assistant chef. Handy!
- 1 head romaine lettuce, salad (chopped)
- 1⁄2 cup crumbled feta cheese
- 1⁄2 cup black olives (pitted and sliced in halves or quarters)
- 3 tablespoons chopped mint leaves
- 1 tablespoon dill (dry)
- 2 tablespoons olive oil
- 1⁄2 lemon
- 1⁄2 cup croutons or 1⁄2 cup toasted pita bread
- Mix all the ingredients together in a large bowl and serve cold.
