What a great salad, and really a beautiful presentation as well. What is there not to love about this? Full of taste, flavor, and seasoned perfectly with the parsley, the mint, and lemon juice. Everyone loved this at the Saturday Lunch table, and the pita was a nice addition. Thank you Sarah! Made for ZWT6 Zee Zesties!

  1. Combine the vegetables, herbs, and bread.
  2. Make a dressing with the lemon juice and oil and season with salt and pepper, whisk together and pour it over the salad, toss well, and chill for 30-60 minutes before serving.
  3. For an authentic Arabic flavor, the dressing should be made of equal parts of oil and lemon juice. However, you may prefer to use more oil - perhaps two to three parts of oil to one of lemon juice. Serves 4 to 6.
