I had a bunch of vegetables I needed to use up.
- 4 small potatoes
- 1 1⁄2 cups baby carrots
- 28 ounces vegetarian baked beans
- 2 tomatoes, chopped
- 1 large onion, chopped
- Clean and dice potatoes.
- Boil potatoes and carrots for 15 minutes; drain.
- Put can of beans in a large pot.
- Add chopped tomatoes and chopped onions.
- Then add the potatoes and carrots.
- Cook until it is all reduced.
