Fat-Free Italian-Balsamic Salad Dressing

"I LOVE this dressing on a salad of mixed greens, onion, tomato, cucumber, green pepper, celery....oh, heck...just about anything!!! I created this one a while back when I was experimenting to find a good dressing without oil, and I have been using it ever since. If I am making only a single-serve salad, I estimate the amounts and add more swetener or spices to fit my taste. Super-healthy and super-tasty!!!"

  • Combine all ingredients except Parmesan and whisk well.
  • Pour over salad,toss to coat, and top with grated Parmesan cheese.

  1. I used a zesty herb italian dressing and unfortunately after I mixed in all the ingrediants, it still tasted like the zesty herb italian dressing... The next time I make this dressing, I will either not use an overpowering zesty italian dressing, or increase the sugar and / or balsamic vinegar. I would have like it sweeter.
     
  2. This is a wonderful dressing! I used it on a side salad of baby spinach & cucumbers-with some red onion, too-and it was great! I admit to using less balsamic vinegar than called for since I wasn't sure how much I'd like it, but it was great & next time I'll increase it. I used low fat italian dressing & the spices were perfect. Instead of parmesan, I sprinkled on just a little low fat feta. Fast, too-another plus! Thank u for sharing this.

  4. I use fat free Italian dressing on my salad every evening. This is a wonderful change of pace, without being to "wild," and I really dig the sweetness. I like this over greens with tomatoes and cukes. I'll bet it would go wonderful over a spinach and strawberry salad as well. Thanks Manda!
     
  5. To me, this is one of the best tasting fat free italian dressings. The balsamic vinegar is definitely the secret ingredient. I've passed this recipe on to many freinds.

I am a single gal, living on my own; currently working as an Occupational Therapist & living in Cumberland, MD. (It is "God's Country" out here...beautiful!) I LOVE to cook and bake, and love anything that looks, tastes, smells, or even closely resembles a veggie. I LOVE moo-cows, and therefore, cannot bring myself to eat any part of the adorable critters (i.e. NO RED MEAT!!) I love the outdoors, and pride myself on being the master griller on the fire pit. My mother's side of the family is 100% Polish, so I have an inborn passion for cooking...unfortunately, along with that comes a love of eating, too!!
