Fat Freddie's Beet Horseradish

• Yields: 1 jar

ingredients

• 1 lb red beet, boiled
• 1 teaspoon salt
• 2 ounces horseradish, fresh
• 1⁄2 cup water
• 2 tablespoons vinegar
• 1 teaspoon pepper
• 1 teaspoon sugar

directions

1. Grate beets and horseradish.
2. Combine vinegar, sugar, salt, pepper and water.
3. Bring to a boil.
4. Pour over grated beets and horseradish.
5. Mix thoroughly.
6. Store in jar in refrigerator.

Absolutely delicious!! Tasted just like my mother-in-law used to make. It was part of her traditional Easter breakfast, and I have not had it in 10 years (I never got the recipe from her before she passed). Thank you!!!
