  1. Cook pasta in lightly salted boiling water until just tender. Drain and keep hot.
  2. Meanwhile cook onion in oil over a gentle heat until softened, but not brown.
  3. Stir in the ham and mushrooms and cook for two minutes more.
  4. Add mustard and cream.
  5. Season with salt and freshly ground black pepper.
  6. Toss through the pasta ribbons, coating well.
  7. Serve in four warmed bowls topped with Parmesan shavings.
