This will be a handy recipe to have in a pinch, but we were all in agreement that the taco chips didn't belong. They were half soggy, half crunchy, and their corn flavor really didn't work with scrambled egg. We might make this again, but without the chips. We added some of what we had on hand; crumbled bacon, diced red onion, and some diced jalapenos. It was quick and easy to prepare, and would be great when only one of us is home to eat.
