This is a very nice soup enjoyed by all of us. I made it last night and reheated it for tonight's dinner. I used four small carrots rather than one large and since my parsley hasn't yet recovered from being transplanted had to use dried parsley. I also used the 2 tsp optional minced garlic. Made for ZWT6 Ssassy's.

  1. Soak beans in hot water to cover for 30 minutes. Saute onion, garlic, carrot, and celery in oil until limp.
  2. Add tomato puree and water. Bring to a boil. Add drained beans and salt and pepper.
  3. Simmer for about 2 hours, or until beans are tender. Add parsley after 1 3/4 hours.
