- 226.79 g bacon
- 1 onion, chopped
- 709.77-946.36 ml frozen shredded hash browns
- 5 eggs
- salt and pepper
- 236.59 ml cheddar cheese, shredded
- chopped fresh parsley (optional)
directions
- Cook bacon and onions in skillet until bacon is crisp. Remove bacon and onions from skillet. Break or chop bacon into small pieces. Drain all but 1/3 cup drippings from skillet.
- Add potatoes and brown.
- Sprinkle bacon and onions over the potatoes. Make five wells in potatoes and break one egg into each well. Season with salt and pepper; sprinkle with cheese.
- Cover and cook on low heat for 5 to 10 minutes or until eggs are cooked to your liking.
- Garnish with parsley, if desired, and serve immediately.

Lovely recipe Crafty Lady. It was easy to prepare, the only differance I did was add a small chopped Jalapeno and some sliced fresh tomatoe from the garden. Put it all together, sprinkled a combo of shredded chedder and mozzerella over the top and cooked as directed. It came out perfect with the eggs medium which is how we like it. Love the one pan cooking which made for easy clean up. Served with hot coffee and home made bread toasted with jelly. YUM!! Thanks for posting.

Yummo!!! What a wonderful breakfast I had courtesy of my PAC daughter!!! And to top it off, only one pan to clean, can't beat that!!! I made this for one serving and did use the refrigerated hash browns. I followed the directions as written other than I scrambled my eggs and added the cheese and salt and pepper to them and then added it to the holes. I didn't make big enough holes so it overflowed over the hashbrowns, but it didn't matter they all cooked up and it was fantastic and filling breakfast. I served it with a bit of fruit!! Thanks for sharing this great recipe.

<p>Update: I have changed my profile picture in honor of my dear best friend and loyal companion that I lost to cancer on 6/25/11. Maxx was the best dog that anyone could ever hope to have in their life. Until we meet again, sweet boy, you will be forever in my heart and memories. I currently live in the country with two dogs (a 12 pound poodle mix named Suki and a new member to the family, a 7-month old(?) 7.5 pound terrier mix named Angel ). I got Angel from the dog pound a week after I lost my beloved Maxx. Suki and I both needed a new companion to help us cope with our loss. Nothing will ever replace Maxx, but she has helped to uplift Suki's spirit. I am a secretary for a county school board. I love to cook, bake, crochet, paint, sew, read and anything to do with crafts. I was born in Tokyo,Japan. My father was in the Air Force and my moher was Japanese. I love to cook (and eat) a variety of foods from many different nations.
