    • 1 lb 98% lean ground beef , cooked and drained of fat
    • 1 onion , chopped and cooked with the ground beef
    • 1 (1 ¼ ounce) package taco seasoning
    • 2 cups frozen corn kernels
    • 1 (15 ounce) can refried beans (fat-free)
    • 2 cups monterey jack cheese , divided (or mixed cheddar, jack etc.)
    • 1 cup salsa
    • 2 green onions , chopped
    • 1 (2 13; ounce) can sliced black olives (optional)
    • 1 tomato , chopped
    • 2 cups Fritos corn chips , coarsely crushed (or Doritos)
    • 4 cups spring mixed salad greens

    Directions:

      Brown the ground beef with the chopped onion and drain the fat.

      Add taco seasoning and cook according to package directions, adding proper amount of water. If you make your own taco seasoning (I use Recipe #4292), use 2 Tbsp, and 1/3-1/2 cup water, and cook until the water is mostly evaporated.

      Add the corn kernels to the meat mixture and cook until thawed and heated through.

      Put salad greens into a deep bowl. Add hot beef over the greens, top with 1 cup shredded cheese.

      Cook refried beans on stove until hot. Add 1 cup cheese and 1 cup salsa. Stir until combined.

      Pour beans over ground beef and cheese in dish.

      Sprinkle green onions, black olives (if you choose), tomatoes and crushed chips on top.
