This quick and easy recipe is a great summer dish and has fantastic fresh flavors. Goes well alongside about anything off the grill. It is best made with high quality olive oil. I normally do not measure the amounts for this dish. You should adjust the salt and oil given the size of your tomatoes, and to your own taste.
- Wash and dice tomatoes. Put diced tomatoes into a glass bowl. Add the salt and olive oil and mix. Serve immediately. That's it. Sometimes the simplest things are the best.
- Note: The flavor of your olive oil will dictate the flavor of this dish. I highly recommend using an oil that's worthy of consuming by itself. Gianfranco Becchina's Olio Verde is what I prefer to use.
