Finally, a recipe that is real "from scratch" banana pudding and pie filling.. Not that vanilla pudding with banana slices. Yay! I just made this recipe and it is to die for. I luv it. It is sooo yummy. I put the pudding in cups not a pie. I will try that later. I have picky eaters and they love it. Just like Lotso the Bear would say "itsa keepah" :D
This was the best banana cream pie I have ever made and tasted!! I made the two pie recipe but only made one pie with a homemade graham cracker crust and the rest of it I made banana pudding with vanilla wafers for my mom's daycare kids. I have tried other boxed banana pudding and pie mixes and this recipe beats them by far and was so easy to make!! I was so proud that I made it because it was from scratch!! Made just half of this recipe as a special treat for a friend of mine who is really a banana cream pie fan! It was his birthday, but I wasn't about to make him a cake, so . . . This is really good and easy to make. I made half the recipe since it's only for the two of us. I added 2 ripe bananas and after mashing them with a fork I mixed them into the pudding with a hand mixer and then heated it thoroughly, then served it in a bowl with a bit of whip cream. Delicious!
This is so yummy. It used my nasty looking overripe bananas and made them into something other than banana bread that is even more yummy. Even DH ate it! I make ours gluten free (no crust) and corn free by using sweet rice flour (acts as a starch) I just go by the texture not to measure it comes out fine. i have used Carnation evaporated milk and water once and organic 3.5% milk another time as that is what I had on hand, sweet organic butter (unsalted), orange blossom water instead of vanilla once and it was nice, and alcohol free vannila another time which was very good, sea salt, plus the rest of the ingredients. I served it with keshta (thick cream found in Middle Eastern shops in a can) on top and sliced banana and I liked it with Fudgy Brownies too. I will probably make this again.
I wrote earlier about adding one banana to 1/2 the recipe, I would like to say after it setting for awhile 1 banana ended up being enough, I would not add two after all. :)
