- 59.14 ml chopped red onion
- 59.14 ml dried apricot halves, cut in quarters
- 59.14 ml chopped red onion
- 29.58 ml dry white wine
- 29.58 ml unsweetened orange juice
- 7.39 ml red wine vinegar
- 473.18 ml cooked chicken breasts, chopped
- 118.29 ml orange section, chopped coarsely
- 118.29 ml red seedless grapes or 118.29 ml green grape
- 59.14 ml cashew pieces, lightly toasted
- 59.14 ml chopped fresh parsley
- 4.92 ml dried coriander
- 0.61 ml pepper
- 0.61 ml salt
- 0.25 ml red pepper flakes
- 4 leaf red leaf lettuce
directions
- Combine quartered apricot halves, chopped onion, white wine, orange juice, and red wine vinegar in a saucepan, and bring to a boil
- Set aside to cool
- Combine apricot mixture with chicken, orange, grapes, cashew pieces, parsley, coriander/cilantro pepper, salt, and crushed red pepper in a large bowl, cover and chill 1 to 2 hours
- Spoon chicken mixture onto a lettuce lined platter to serve
- Or place on 4 salad plates and serve

This is a very pretty salad! The colors are just wonderful. I used a mixture of green and red seedless grapes in this recipe along with the other listed fruits. The ingredient list has ½ cup purple onions listed twice. (?) I only used ½ cup. Next time I wouldn’t cook the onions for this salad as I think I would prefer them raw. I also will probably add a slightly stonger vinegarette just as a matter of personal preference. But again, I can’t say enough good things about this salads striking visual appeal

This is a lovely salad, we loved the dressing, the cashews and apricot added a wonderful taste and crunch and the red pepper flakes were a great finish. The instructions were well set out and easy to follow, but I did notice that the 1/4 cup of red onion was listed in the ingredients twice, while it was only used in the instructions once. We will be making this again, very refreshing and tasty, it does deserve the 5 stars, thanks for submitting it to the contest and good luck!!
