Loved this salad with all the different flavors and textures. Did use kale and romaine for the lettuce. I will leave the cashews out until serving instead of chilling to keep the crunch.
I really like this salad, especially with the cashew pieces - they give it a lovely crunch. It's very colourful and full of flavour.
This is a very pretty salad! The colors are just wonderful. I used a mixture of green and red seedless grapes in this recipe along with the other listed fruits. The ingredient list has ½ cup purple onions listed twice. (?) I only used ½ cup. Next time I wouldn’t cook the onions for this salad as I think I would prefer them raw. I also will probably add a slightly stonger vinegarette just as a matter of personal preference. But again, I can’t say enough good things about this salads striking visual appeal
This is a lovely salad, we loved the dressing, the cashews and apricot added a wonderful taste and crunch and the red pepper flakes were a great finish. The instructions were well set out and easy to follow, but I did notice that the 1/4 cup of red onion was listed in the ingredients twice, while it was only used in the instructions once. We will be making this again, very refreshing and tasty, it does deserve the 5 stars, thanks for submitting it to the contest and good luck!!
