This is fantastic! I used a technique another food.com chef shared earlier today. So, I soaked the potato slices in a bottle of beer for 1/2 hour before assembling the casserole. I then assembled the casserole in scalloped potato fashion. I then layered the green pepper and onion atop. Thanks, ~Val~, for what turned out to be great potatoes! Made for My Three Chefs event.
