This is a simple, yet fancy twist on baked potatoes. Great for picnics, potlocks, you name it. It is a favorite of everyone I know.
- 6 large potatoes, peeled and sliced
- 1 large onion, in strips
- 1 green pepper, in strips
- 1⁄4 cup margarine
- Mix all in a 2 quart baking dish.
- Bake at 375 for one hours.
This is fantastic! I used a technique another food.com chef shared earlier today. So, I soaked the potato slices in a bottle of beer for 1/2 hour before assembling the casserole. I then assembled the casserole in scalloped potato fashion. I then layered the green pepper and onion atop. Thanks, ~Val~, for what turned out to be great potatoes! Made for My Three Chefs event.
