Famous Chicken Enchiladas

- 473.18 ml cooked chicken breasts, shredded
- 1 white onion, chopped fine
- 226.79 g brick cream cheese (softened)
- 113.39 g can green chilies
- 793.78 g can green enchilada sauce
- 226.79 g package shredded monterey jack cheese
- 15 soft taco-size flour tortillas
directions
- Preheat oven to 350°F.
- In a large bowl, combine chicken, cream cheese, onion, 1/2 the cheese, and green chilies.
- Mix all ingredients well. Make sure the cream cheese is not clumpy.
- In a 9x13 rectangular baking dish pour enough enchilada sauce to coat the bottom.
- In each tortilla put approximately 3-4 large tablespoons of the mixture.
- Roll each tortilla and place into the pan.
- Once pan is full, pour enough enchilada sauce on top to make sure each tortilla is covered.
- Sprinkle remaining cheese on top.
- Bake for between 25 and 30 minutes.
- Allow to cool 10 minutes before serving.
- Garnish with sour cream, avocado, tomatoes, etc.

I made these for dinner last night and my boyfriend said they were delicious. I left out the green chiles and had to use red enchilada sauce, because Scott won't eat green sauce, but when I make them to again, I will definitely try the green sauce. Easy to make and for sure a keeper. Thanks for sharing after 15 years.

I love to socialize. Saturday night is usually an impromptu dinner with friends and games. Recently, I went wine tasting and loved it. I was never much for wine, I always prefered a cocktail. I am enjoying teaching my palate to distinguish flavors and it has helped with my cooking.
My knife skills are the worst. I need a class from Emeril. Thank GOD for the chopper!!
