This is a recipe from my dad's sister. Using fat-free mayonnaise will make this a Weight Watchers Core recipe. I have not made this yet, and servings are estimated.
- 4 cups shrimp, cooked, peeled, and deveined
- 1 tablespoon lemon juice
- 1 1⁄2 cups diced celery
- 1 cup mayonnaise
- 2 eggs, boiled
- 1 tablespoon capers
- Chop boiled eggs.
- Add other ingredients and mix.
Very nice shrimp salad and easy to assemble. I added in 1 cup of raw cauliflower and wish I had added another 1/2 cup of shrimp as there was a lot of dressing. Thanks South Carolina Girl for posting. Made for I Recommend tag.
Since this was just for the 2 of us, I cut the recipe in half & that gave each of us a nice large helping! The only change I made was to use lemon pepper instead of the S&P! Made for A VERY FAST, VERY TASTY LUNCH! [Tagged, made & reviewed for one of my adoptees in the current Pick-A-Chef]
