- 2 cups penne pasta, uncooked
- 2 tablespoons crisco oil (vegetable or Canola)
- 2 onions, chopped
- 2 garlic cloves, finely chopped
- 1 1⁄2 cups carrots, chopped
- 1 cup red pepper, chopped
- 1 cup frozen peas
- 2 tablespoons all-purpose flour
- 1 (370 ml) can Carnation Evaporated Milk (regular, 2%, or fat-free)
- 1 (250 ml) can tomato sauce
- 4 cups cooked chicken, chopped
- salt and pepper
- 1 cup mozzarella cheese, grated
directions
- Cook pasta as directed on package.
- Heat oil in a large non-stick skillet on medium heat. Add onion, garlic, carrots, red pepper and frozen peas. Cook gently for 5 minutes or until tender. Add flour and cook for 3 minutes.
- Stir in Evaporated milk and tomato sauce. Bring to a boil, add chicken and cook until heated through. Season with salt and pepper. Stir in cheese until melted.
- This is not recommended for freezing,.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
