    From Disney's familyfun.com. Except for the lime juice and cardamom, all ingredients used to make this fruit salad were local! Adding another blueberry recipe to my arsenal! For intense lime flavor, try key limes for extra tangy zip!

    Ingredients:

    Dressing

    • 1/4 cup fresh lime juice
    • 1/4 cup honey (soften honey first to make it easier to whisk) or 1/4 cup agave nectar (soften honey first to make it easier to whisk)
    • 1 pinch ground cardamom (optional-my addition)
    • 2 tablespoons chopped fresh mint

    Salad

    • 3 cups fresh blueberries, washed and drained
    • 1 quart fresh strawberries, washed, hulled and halved
    • 3 medium apples, washed, cored and cut into 3/4-inch-inch chunks (*I used 'Criterion' apples-your choice to peel)

    Garnish

    Directions:

      In a large bowl, whisk together the dressing ingredients.
    2. 2
      Add the salad ingredients and *to avoid the apples turning brown, toss [immediately] to combine.
    3. 3
      Let the fruit salad set for 15-30 minutes to allow the flavors to blend.

      Garnish salad with fresh mint leaves just before serving.

      Servings are estimated.

      Great recipe. I didn't have cardamon but used a pinch of allspice instead, not too sweet just right!

      I usually don't like fruit salads but I figured a fruit salad might fit the bill trying to feed 4 kids something that they will eat. I really enjoyed it. I used bottled juice-its what I had. I didn't have any cardamom either. I was thinking about throwing in a handful of pecans next time and there will be a next time. MMMmmm.
