ingredients
- 2 tablespoons oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 1⁄2 teaspoon salt
- 1 (1 1/4 ounce) package taco seasoning
- 1 tablespoon dried oregano
- 1 chipotle chile in adobo, minced
- 2 cups brown lentils
- 4 cups broth
- 1⁄2 cup taco sauce or 1/2 cup salsa

- shredded cheese
- diced tomato
- iceberg lettuce, shredded
- sour cream
- onion, diced

directions
- In large saute pan, heat oil. Add onion, sprinkle with salt, stir & saute until softened. Add garlic & stir.
- Stir in taco seasoning, oregano & chipotle.
- Add lentils & broth. Bring to a boil, reduce heat & simmer about 30 minutes until lentils are soft & most liquid is reduced. You want saucy, not soupy, lentils.
- Check for seasoning.
- Heat taco shells & fill as desired.

I didn't have chipotle on hand, which probably would have made these absolutely amazing. However, my meat-loving husband didn't mind having these on his tacos instead of meat, which is really saying a lot! A couple of technical items, I would up using a pound of dry lentils with a little extra beef broth, and I simmered them for about 40 minutes to get just the right texture and sauciness. I also used about 1/4 cup of homemade taco seasoning in place of the packaged stuff. I will likely make this again. Thank you Elmotoo!

This turned out great!! DH absolutely loved it and didn't even touch the other stuff on his plate. I used Recipe #166030 for the taco seasoning. Next time we could probably even double the chipotle - DH likes spicy and this was pretty mild. I probably over cooked it a bit but he still loved it. I didn't get a pic cause my attempt at making corn tortillas didn't turn out so well :) Thanks so much for this great recipe!! RecipeNap for Veg*n Swap 33!
