Recipe by absentminded chef

I started to make fajitas tonight, and I discovered I had no tortillas. It was getting late, so I needed something quick. I started scrambling some eggs when my son came over and suggested putting the fajita meat in the eggs. So was created the fajita egg skillet dish! Ingredients Nutrition

  • 12-1 lb stew meat
  • fajita seasoning mix (http -- or /mexican.food.com or recipe or fajita-seasoning-mix-28011)
  • 6 eggs
  • 12 cup salsa
  • 12 cup shredded cheese
  • 12 green pepper, chopped
  • 12 red pepper, chopped
  • 12 onion, chopped

  1. Brown stew meat in pan. Add fajita seasoning mixed in a cup of water and simmer for 15 minutes or until sauce thickens. While meat is cooking, start to scramble eggs in a separate pan. As eggs start to set, add salsa, cheese, peppers, and onion. When meat is done, cut into small pieces or shred and add to egg skillet. Serve hot.
