Fajita Egg Skillet (Bob Evans Skillet Copycat?)

"I started to make fajitas tonight, and I discovered I had no tortillas. It was getting late, so I needed something quick. I started scrambling some eggs when my son came over and suggested putting the fajita meat in the eggs. So was created the fajita egg skillet dish! Feel free to add or delete ingredients to your choosing."

  • 12 - 1 lb stew meat
  • fajita seasoning mix (http -- or /mexican.food.com or recipe or fajita-seasoning-mix-28011)
  • 6 eggs
  • 12 cup salsa
  • 12 cup shredded cheese
  • 12 green pepper, chopped
  • 12 red pepper, chopped
  • 12 onion, chopped

directions

  • Brown stew meat in pan. Add fajita seasoning mixed in a cup of water and simmer for 15 minutes or until sauce thickens. While meat is cooking, start to scramble eggs in a separate pan. As eggs start to set, add salsa, cheese, peppers, and onion. When meat is done, cut into small pieces or shred and add to egg skillet. Serve hot.
