- 1⁄2 - 1 lb stew meat
- fajita seasoning mix (http -- or /mexican.food.com or recipe or fajita-seasoning-mix-28011)
- 6 eggs
- 1⁄2 cup salsa
- 1⁄2 cup shredded cheese
- 1⁄2 green pepper, chopped
- 1⁄2 red pepper, chopped
- 1⁄2 onion, chopped
directions
- Brown stew meat in pan. Add fajita seasoning mixed in a cup of water and simmer for 15 minutes or until sauce thickens. While meat is cooking, start to scramble eggs in a separate pan. As eggs start to set, add salsa, cheese, peppers, and onion. When meat is done, cut into small pieces or shred and add to egg skillet. Serve hot.
