Fabulous Middle Eastern Tabbouleh

"A lovely side dish or snack... If you are looking for a way to make it even nicer, then adding a little feta cheese works well. However, I've kept this out due to the calorie content and fats."

  • Cover the bulgar wheat with water. Set aside for 20 minutes while you get to work on the rest.
  • Take the leaves off the tomatoes and cut out the stalks. Soak the tomatoes in hot water for 30 seconds. Then peel them, de-seed them, cut into quarters, dice and place in another bowl.
  • Add the mint, onions and parsley to the tomatoes.
  • When the bulgar wheat has absorbed all the water, fluff with a fork and add it to the tomato mixture.
  • Drizzle over the lemon juice and olive oil and season, to taste, with salt. Mix well to coat the ingredients in the liquid.

I am a a mother of one little boy who has Autism... this means I am a very busy lady but I still love to cook and enjoy spending hours in the kitchen with the little man. One day he'll be a chef! At just 3 years old, he knows (and does) make a beef casserole to die for and one of the best pasta sauces I've ever tasted!!! Anyhow...
