Growing up in central Texas, my mom made these beans all the time with cornbread. I have seen some more complicated recipes, but really, you only need beans, water, salt, and chili powder. These are the kind of beans you will get as a side in most BBQ joints. Bet you didn't know they were this easy!
- Rinse beans, then place them in a large pot. Pour enough water to cover them by 2-3 inches. Bring to a boil over med-high heat, then reduce heat to low and cover. Simmer 2 1/2- 3 hours, stirring about every half hour. (If they get dry too quickly, just add a little more water).
- Once cooked, add chili powder and salt. (I prefer sea salt).
