Super easy and cheesy, spicy potatoes done in the microwave in about 10 minutes. One of my favorite side dishes.


  1. Scrub potatoes thoroughly.
  2. Cut potatoes into 1/4 inch thick slices.
  3. In a 1 1/2 to 2 quart casserole, combine potato slices and water.
  4. Microwave on high, covered, for 9 to 11 minutes or until potatoes are just tender, stirring after every 3 minutes.
  5. Drain potatoes well.
  6. Dollop cheese onto potatoes.
  7. Cook uncovered on high for 45-60 seconds until cheese melts.
  8. Gently stir cheese into potatoes.

These came out great! Super quick and loved them. I used regular Cheez Whiz instead of jalapeno and spinkled with some salt and pepper before serving. This is a wonderful recipe for a last minute side dish. Thanks for posting!

This recipe got applause from my son yesterday!! So, so easy. I used plain cheese wiz and sprinkled some green onions on top after cooking. Unbelievable! I never cooked potato slices (actually, I cubed mine) in the microwave before, but I sure will from now on. Thankyou for the great recipe.
