Extra Spicy Refried Beans with Lettuce, Tomato, and Lime

Ingredients Nutrition


  1. Heat canned refried beans in a medium skillet over medium heat.
  2. Stir chopped jalapeno,hot sauce and garlic powder into refried beans.
  3. Reduce heat to low and keep warm until ready to serve.
  4. Combine lettuce and tomatoes in a bowl.
  5. Squeeze the juice of 1 lime over the bowl and season the lettuce and tomatoes with salt.
  6. Toss to combine.
  7. Drizzle olive oil over the bowl and toss lettuce and tomatoes again.
  8. Serve refried beans along side lettuce and tomatoes.

A great meal for those weeknights when you are busy and tired. Simple and quick, just add tortillas and you have a complete dinner in under 30 minutes. The only change I made was to us 1 fresh jalapeno in place of canned. The lime juice is a must as that is what really makes this dish stand out. Thanks so much for the post.

I really liked these refried beans - they're like a more grown up version of refried beans. I didn't use the tomatoes (not my favorite thing raw), but I followed the rest of the recipe as directed. I served on whole wheat tortillas with the lettuce on the side. The lime zing was different, but I probably wouldn't add the lime next time. I had shredded medium cheddar on the table and we all used the cheese to cut some of the heat of the spicy refried beans. These really were spicy! Great burrito filling! Thanks for the recipe! This was quite good! The tomatoes and shredded lettuce added quite a different to refried beans, and the lime was an interesting addition as well. I threw beans into warm tortillas and served the lettuce and tomatoes along side... taking a bite of the tortilla roll-up and then a bite of the lettuce & tomato mixture hehe. Next time I might try adding a bit of cumin to the bean mixture for added flavor and zing :-) Thanks for the recipe!
