OMG - this was delicious. I did alter it a bit but also had a "hot sauce" accident so it came out rather spicy. I added 2 cloves of garlic and extra chicken stock. I also cooked the asparagus tips separately and didn't put them through the blender, just added them to the blended soup.
This turned out quite easy and delicious for us! I used dry thyme and left out sour cream and chives. It made so much I froze the rest in 2 person batches for later on. Thanks!
This was simple, simple, simple to make, and so healthy too. I didn't have Thyme at home, but it didn't seem to matter. This is a great starter for a dinner. <br/><br/>The soup is hearty, if you want it comes out medium-thick, if you want it thicker, put in some broccoli or add more asparagus. Highly recommend, it's simple and healthy!
Two amazing of two here, had to sub in 25% broccoli, but seemed just fine. I highly recommend.
