I tried this at a bridal shower and just had to get the recipe! It's so simple and delicious. Be sure that you don't add the cashews early- they get a little mushy.
- 3 cups cooked chicken, cubed
- 1 cup celery, chopped
- 1 cup mandarin orange segments
- 1 cup cashews
- 2 tablespoons salad oil
- 1⁄2 cup mayonnaise or 1⁄2 cup sour cream
- 2 tablespoons orange juice
- 2 tablespoons vinegar
- salt and pepper, to taste
- Combine all salad ingredients in bowl, except cashews.
- Mix all dressing ingredients.
- Toss salad with dressing.
- Add cashews immediately before serving.
This was a very tasty chicken salad. I omitted the salad oil from the dressing, because the consistency was perfect after the addition of the orange juice and vinegar. I loved the cashews in the salad- actually added a pinch extra because they are one of my favorite nuts. I only wish the dressing would have picked up a bit more of an orange flavor. I think next time I will grate a little fresh orange zest into the mixture before I serve it. Thanks for posting this recipe Starry. Enjoyed this chicken salad, but will cut the amount of dressing, as it was a bit runny. Loved the cashews and mandarin oranges as accents. I used white vinegar, should I have used apple cider vinegar? Made for Top Favorities of 2008 Tag as prize to Starrynews for becoming FROG #7.
Easy and tasty! I did use non fat yogurt and next time will try it with mayonnaise. I also added quite a bit of pepper and some salt. I like the convenience of this-made it w/o the cashews and then later put them in. Congratulations Starrynews for TOP win in Top Favorites of 2008 game! This is my FIRST pic with new camera so am not use to the settings yet.
